Kidney Bean Loaf

Description:

Another great substitute for meat loaf.


Ingredients:

2 C dried kidney beans
Enough water to fully cover beans (approx. 4 C)
4 C stale bread crumbs
2 C vegan cheese, grated
1/2 C onion, chopped
1/2 C vegetable shortening or vegan butter
Egg Replacer equal to 1 egg, OR 2 T tomato paste
1 1/2 tsp salt
1/2 tsp pepper

Baste: 1 T melted vegan butter mixed in 1/4 C water

Instructions:

1. Preheat oven to 325°F.
2. Wash beans, soak overnight in water.
3. Bring beans to a boil in the soaking liquid and simmer until beans are tender. Drain.
4. Mash beans fine and add all the other ingredients, except Baste ingredients, and mix well.
5. Pack into a loaf pan and bake 1 to 1 1/2 hours. Baste occasionally with Baste ingredients.
Serves 6-8
