Quick & Easy Baked Enchiladas

Description:

This recipe tastes awesome when made in Pampered Chef stoneware baking dishes!


Ingredients:

6 to 8 small (6") corn tortillas
1 can vegetarian refried beans
Vegan mozzarella, shredded or cubed
Salsa or taco sauce
1 to 2 fire roasted green chili peppers, diced
Black olives, if desired
Granulated or fresh garlic
Taco seasoning, to taste
Fresh cilantro, garnish

Instructions:

1. Preheat oven to 400°F.
2. Spread enough salsa or taco sauce in a baking dish to lightly cover the bottom.
3. Spread refried beans 1/8"-1/4" thick on whole surface of tortillas. Cheese may also be sprinkled inside the tortillas, though I usually only sprinkle it on top of the dish before baking.
4. Roll up tortillas and place in baking dish, side by side.
5. When all tortillas are in, cover them with more salsa or taco sauce and sprinkle with cheese and black olives, if using.
6. Cover dish with foil (shiny side down to avoid heat reflection) and bake for 30 minutes.
7. After baking, remove foil and sprinkle on diced chili pepper, garlic, taco seasoning and cilantro.
