Lemon Grass Tea

Description:

A light and refreshing accompaniment to the complex flavors of Thai cuisine.


Ingredients:

2 tsp Thai Kitchen Lemon Grass (Dried) or 4 pieces fresh lemon grass*, cut in half and bruised
1 T fresh ginger, sliced or coarsely chopped
1 T honey, or more to taste (Agave Nectar or maple syrup)
2 C boiling water
Optional garnish: 2 sprigs of fresh mint

Instructions:

Combine lemon grass, ginger, honey (Agave or syrup) and water in a tea pot. Bring to a boil for 5 minutes. Strain mixture through a coffee filter or a fine strainer to remove the lemon grass and ginger. Serve warm or cold with additional honey to taste. Decorate the cup with mint sprigs or add them to the tea for flavor. Serves 2.
