Basmati Rice Pilaf


Ingredients:

2 T butter
1 C mirepoix, small dice
2 C basmati rice, washed 3 times
3 C white stock
Pinch saffron
Salt, as needed
Pepper, as needed
Thyme, as needed
Bay leaf, as needed

Instructions:

1. Saute the mirepoix in the butter until the onion is transparent.
2. Add the rice, saffron and herbs.
3. Add the stock and seasoning, bring to the simmer.
4. Cover and cook in the oven or on low heat until the stock is absorbed.
5. Take off heat and let rice steep for 10-15 minutes, covered.
