Hoecakes


Ingredients:

1 C fine-grind cornmeal
1 tsp baking powder
3/4 tsp salt
2 T sugar
2 T finely chopped green onion, white and light green portion
1 egg (or Egg Replacer)
1 C buttermilk
2 T unsalted butter, melted
2 T canola oil

Instructions:

1. Preheat griddle.
2. Meanwhile, in bowl, stir together cornmeal, baking powder, salt, sugar and green onion. Add egg, buttermilk and butter; whisk to combine.
3. Pour 1 T oil onto griddle; spread with spatula. Pour batter onto griddle in 2" circles. Begin by testing 1 or 2 hoecakes to see if griddle is hot enough; they should be done with cooked about 30 seconds per side. If griddle is too hot, turn down heat. Repeat to cook remaining hoecakes, adding more oil to griddle as needed.
4. Transfer hoecakes to warmed platter; serve hot.
