Lentil Dal
Ingredients:
2 large onions -- chopped
4 cloves garlic -- minced
1/4 C water
1 tsp salt
1 tsp turmeric
2 tsp cumin seed
2 tsp coriander powder
1/2 tsp cayenne
2 C lentils -- rinsed
5-6 C boiling water
Instructions:
In a heavy kettle, saute the onions and garlic in 1/4 C water until the onion starts to turn golden, then stir in the salt and spices and continue to cook another minute. Add the lentils and boiling water (start with 5 C), then cover and simmer 1 hour, until the lentils are tender. Stir occasionally while cooking. If the mixture becomes too dry, add additional water.
