Potato Patties with Hidden Broccoli


Ingredients:

Potatoes
Broccoli
Carrots
Seasonings
Breadcrumbs
Oil for frying

Instructions:

I steam and mash some potatoes, then add steamed/pureed broccoli and carrots, as well as some seasonings. Form patties (add some soy flour if needed to firm them up) and dip in breadcrumbs. Fry in a pan with a bit of oil. Add ketchup for toddler enjoyment. :-)
