Tasty Fall Veggies


Ingredients:

4 quarts water
2 T hot sauce
2 C carrots, cut on a bias
2 C onion, largely diced
2 C red potatoes, quartered
2 C broccoli florets
2 C cauliflower pieces
4 T vegan butter, softened
1 tsp Northwoods Seasoning

Instructions:

1. In a large stockpot, combine water and hot sauce. Bring to a boil.
2. Add carrots, onion and potatoes to boiling water and simmer until fork tender, about 10 minutes. For the last 5 minutes of cooking, add broccoli and cauliflower pieces.
3. While veggies are simmering, prepare seasoning butter by mixing butter with seasoning. Set aside.
4. Once veggies are fork tender, drain water and in large bowl mix butter mixture in with veggies. Serve.
