Corn Pudding
Ingredients:
1 pkg (10 oz) frozen organic corn, thawed
1/3 C organic cane sugar, more or less to taste
1 tsp sea salt, or to taste
Freshly ground black pepper, to taste
2 T corn meal or corn flour
2 T unbleached organic white flour
1/4 tsp baking powder
4 T melted butter (vegan)
4 organic eggs (or Egg Replacer)
1 C organic low fat milk (nondairy)
1 C shredded sharp cheddar cheese, reduced fat cheddar is fine (vegan)
Paprika, optional
Instructions:
1. Preheat oven to 375°F.
2. Spray a 7x11-inch glass baking dish with canola or olive oil spray. Set aside. Mix all ingredients except paprika together in a large bowl. Pour batter into prepared baking dish. Sprinkle with paprika if desired.
3. Bake for 45 to 50 minutes or until set. Pudding is done when a knife inserted in the center comes out clean.
