Tofu Scramble

Description:

Serve with hashbrowns and fresh fruit.


Ingredients:

1/2 large onion, diced
1 C mixed veggies of choice, diced
Olive oil
1 pkg extra firm tofu, diced or smashed
1/2 tsp turmeric
1 T tamari
Salt and pepper, to taste
2 T nurtitional yeast

Instructions:

1. Press tofu to remove as much water as possible.
2. Saute onion and mixed veggies in olive oil until they begin to soften.
3. Add tofu and seasonings. Cook on medium heat until it starts to brown.
