Green Bean Potato Salad

Description:

A quick, tasty potato salad!


Ingredients:

2 lbs potatoes, cooked and cooled
3 C fresh green beans, ends cut and halved
6 T olive oil
2 T vegan balsamic vinegar
2 tsp crushed garlic
1/2 tsp salt
1/2 tsp pepper
1 T vegan Dijon mustard
1/4 C fresh cilantro, chopped

Instructions:

1. Slice cooked potatoes into bite size chunks. Mix with fresh green beans.
2. To prepare marinade, combine the olive oil with the balsamic vinegar and crushed garlic. Add the salt, pepper and Dijon mustard and mix well. Pour over the potatoes and green beans.
3. Gently mix salad; cover and chill at least 2 hours before serving.
4. Garnish with cilantro.
