Rice Bran Buttermilk Pancakes
Ingredients:
1 C rice flour or all-purpose flour
3/4 C rice bran
1 T sugar
1 tsp baking powder
1/2 tsp baking soda
1 1/4 C buttermilk*
Egg replacer equal to 3 eggs
Nonstick cooking spray
Fresh fruit or maple syrup (optional)
*To make vegan buttermilk, add 2 tsp lemon juice or vinegar to 1 C nondairy milk.
Instructions:
1. Sift together flour, bran, sugar, baking powder, and baking soda into large bowl.
2. Combine buttermilk and Egg Replacer in small bowl; add to flour mixture. Stir until smooth.
3. Pour 1/4 C batter onto hot griddle coated with nonstick cooking spray. Cook over medium heat until bubbles form on top and underside is lightly browned. Turn to brown other side. Serve with fresh fruit or syrup.
