Grilled Corn, Quinoa and Spinach Salad
Description:
A great summer salad when corn on the cob is in season.
Ingredients:
2 ears corn, grilled in husk, then cut free from cob
1 1/2 C cooked and chilled 365 Quinoa
1 (15 oz) can 365 Black Beans, drained
1 C sliced jicama
1/2 C 365 Walnut Halves & Pieces, toasted
2/3 C feta cheese crumbles or vegan cheese
1/2 C roasted red peppers, sliced
365 Chipotle Ranch Dressing, or dressing of choice
3 C washed and dried spinach
Instructions:
Gently toss corn, cooked quinoa, black beans, jicama, walnuts, cheese and roasted peppers together with about 2/3 C dressing in a large bowl. Arrange spinach on a large platter and top with quinoa mixture. Drizzle with more dressing, as desired.
