BBQ Tofu Salad


Ingredients:

1/2 lb firm tofu (preferably herbed)
1/2 C diced green peppers
1/2 C diced Spanish onion
2 T roughly chopped cilantro
1/2 tsp cumin
1/2 C whole-kernel corn
1/2 C vegan mayonnaise
1/4 C barbecue sauce (without anchovies)
6 sandwich rolls

Instructions:

1. Wrap the tofu in clean paper towels and gently squeeze out the water. Dice into 1/2-inch cubes.
2. Being careful not to break the cubes, combine with the green peppers, onion, and cilantro.
3. Combine the cumin, corn, vegan mayonnaise, and barbecue sauce in a small bowl. Mix well.
4. Gently combine the tofu mixture with the dressing.
5. Serve on the sandwich rolls.
