[Daniel] Meals Alone, Night #3 - Quesadillas

This meal went significantly worse than last night's, though not completely my fault. You can find the original recipe on Moriah's recipe database. I lightly modified it to use refried beans, swapped onions for black olives and lime juice instead of lemon.

The first part of the process, making the filling, went mostly fine. Slow to prepare but no real show-stoppers during cooking. I had prepped three tortillas (from an unopened package) out of the freezer with some vegan cheese. I filled the first one and tossed it on the skillet to cook then started filling the other two. It wasn't until I got to the last one that I saw it. The last tortilla had mold on it, so I threw it out and inspected the other two. Sure enough, more mold. So I ended up throwing out half of supper as well as the remainder of the package of tortillas.

Frustrated, I went out to the store at 8:30 p.m. and got more tortillas. Luckily, The Merc, which happens to be the fantastic local co-op, had just gotten in a fresh shipment so getting replacement tortillas wasn't too bad. This is normally quite hard to find, as most store-bought tortillas are not vegan-friendly. I returned home and finished making dinner.

The end result turned out decently and was fairly tasty. Pictures of the final product follow.
